BLOCK: changing colors

I am new to AutoCad. I have AutoCad LT 2011. I would like to get white (or light yellow) and black colors for the text like it is shown in the attached image, which I created in one image editing program.

 

I adjusted the colors in image  editing program, because I have a problem with the block. (I am using a file, which was created by another engineer some time ago.)

UNGROUP doesn't’t unblock the block.

EXPLODE or BLOCK EDITOR kills all the names in the table and I don't know what names to change to a different color.

 

Also, I am not able to change blue color to be printed as black color even if I change the color of the layer to black. Do I need to change colors in BLOCK EDITOR? How?

I would like also to be able to change some names there. How this can be done?
